500g northern tofu (firmer, better suited for stir-frying)
2 tablespoons homemade chili sauce (a richer variety is recommended)
4 cloves fresh garlic

Cooking oil to taste
1 teaspoon sugar
Light soy sauce to taste (depending on the saltiness of the chili sauce)
Preparing the ingredients:
Cut the northern tofu into peanut-sized cubes. This size allows for a more flavorful texture and allows for easier absorption of flavor. Alternatively, you can crush the tofu by hand. Peel and mince the garlic. Wash and cut the green onions into sections and set aside.
Sauté and season until fragrant.
Pour an appropriate amount of cooking oil into a hot pan (add more oil if using a less oily chili sauce). Once the oil is hot, add the minced garlic and sauté until fragrant. Be careful to control the heat to prevent the garlic from burning and affecting the taste.
Frying the Tofu
Place the prepared tofu cubes in the pan and fry gently over medium-low heat. Once one side is golden brown, carefully flip and continue frying. Be patient until the surface of the tofu is slightly charred and the moisture inside has evaporated.
Seasoning and Stir-frying
Add two tablespoons of chili sauce and one tablespoon of sugar to enhance the flavor. If the chili sauce is not salty enough, add light soy sauce to taste. Stir-fry quickly to coat each piece of tofu evenly.
Drain and remove from pan.
Pour in half a bowl of water and bring to a simmer over medium heat. When the sauce is almost reduced, sprinkle in the chopped green onions and stir-fry quickly. Then turn off the heat and serve.
The choice of tofu is crucial. Northern tofu has a firm texture and is not prone to breaking when pan-fried.
Be patient when frying the tofu, and wait until one side is set before flipping to keep it intact.
