Thai Tom Yum Goong is one of Thailand's most iconic national soups, renowned worldwide for its unique spicy and sour flavor. This rich, complex soup boasts numerous health benefits, making it perfect for those cravings during the summer months. Learn how to make this exotic classic at home.

Ingredients (Serves 2-3)

image The charm of this soup lies in the perfect blend of ingredients, each essential to its flavor:

Main Ingredients: 6 fresh large shrimp (deveined)

Vegetables:

4 cherry tomatoes (halved)

10 mushrooms (sliced)

A few onions (julienned)

To taste, bell peppers (cut into strips)

Spices:

A few slices of galangal

A few lemon leaves

2 dried chilies

Seasoning:

15g lemon juice

1 tablespoon fish sauce

1 Thai Tom Yum Goong soup sachet

Other ingredients: 1000ml water

Detailed Instructions

image 1. Preparing the Ingredients

First, rinse all ingredients thoroughly. Large shrimp require special preparation: remove the devein, legs, and whiskers, but keep the heads to enhance the flavor of the soup. Cut the vegetables to your liking. It is recommended to halve the cherry tomatoes, slice the mushrooms, julienne the onions, and cut the bell peppers into strips.

2. Sauté the Ingredients

Pour a moderate amount of cooking oil into a hot wok. First, add the shredded onion, bell pepper strips, and mushroom slices and stir-fry until slightly softened. Then, add the pre-cooked prawns and stir-fry until the shrimp turn red. Remove from heat and set aside. Separate the shrimp heads and flesh.

3. Prepare the Soup Base

Pour 1000ml of water into a pot and bring to a boil over high heat. Add the Thai Tom Yum Goong soup sachet. Stir continuously until the sachet is completely dissolved. Then, reduce heat to medium-low and simmer for 10 minutes to release the flavors of the spices.

4. Season to taste

Add the previously sautéed shrimp heads to the broth and continue simmering for 2 minutes to enhance the umami flavor. Then, add the lemon juice, lime leaves, fish sauce, and shrimp, and finally the cherry tomatoes. Cook for about 1 minute before removing from the heat.

Cooking Tips

Shrimp Preparation Tip: Leaving the shrimp heads on will enhance the broth, but be sure to rinse thoroughly.

Spices: Galangal and lemon leaves are the heart of Tom Yum Goong. Avoid substituting regular ginger and lemon peel.

Adjusting the spiciness: Adjust the amount of dried chili peppers to your taste.

Balancing the acidity: Lemon juice is best added last to avoid overheating and affecting the acidity.

Vegetarian version: Tofu or various mushrooms can be substituted for the shrimp for an equally delicious flavor.

Nutritional Benefits

This Tom Yum Goong soup is not only delicious but also offers multiple health benefits:

Shrimp: Rich in high-quality protein and astaxanthin, which have antioxidant properties.

Lemon: Provides a rich source of vitamin C and boosts immunity.

Galangal: Aids digestion and relieves stomach discomfort.

Chili peppers: Boosts metabolism and promotes perspiration.

Serving Suggestions

Tom Yum Goong is best enjoyed hot, with Thai rice or as a hot pot base. Add additional fish sauce or chili sauce to taste. Any remaining broth can be used to cook rice noodles or other dishes for a unique flavor.
